
Delicious raspberries from November to April Wendy's Garden now spreads over a couple of acres of our property, covering the kitchen garden with vegetables and fresh herbs but also incorporating the orchard of stone fruit, apples, pears, quinces, figs, persimmons, avocadoes, a myriad of citrus and an extensive berry grove of raspberries, loganberries and more.
The Pantry Range is derived from and inspired by what is great in the garden at any time. As with all produce growing, sometimes we have an abundance of something that is in excess of our needs, and turning this into a product that can be used after the fresh produce is finished makes sense to us.
So whilst raspberries are frozen for use in the restaurant throughout the cooler months, tomatoes might be turned into chutney, rhubarb into jam, quince into paste. We don't make pantry items that will be on the shelf all year in our
Luscious figscellar door, as we don't always have enough excess, and the last thing we want to do is buy in out-of-season produce. So that is why sometimes we will have it, and sometimes we won't - the learning being if its there and you want it, buy it because it may not be next time you visit!
Made from the juice of unripe grapes, verjuice is a diverse cooking ingredient. It has a delicate natural acidity and so can be used in place of acids in cooking - so instead of citrus, vinegar or even wine, providing a softer effect. It makes a delicious salad dressing when combined with olive oil and seasoning, is great in risotto, for deglazing pans and more!
A taste sensation of roasted and blended spices and nuts, including sesame, coriander and cumin seeds with macadamia nuts. Take some crusty bread, dip into Montalto Olive Oil and then into Dukkah for an easy snack with drinks.
