WINE: 2001 PENNON HILL SHIRAZMade from fruit sourced from the Strathbogie Ranges in the Central Victorian Highlands, this Shiraz is an intense purple red in colour, with rich blackberry and liquorice aromas that follow through to classic cool-climate savoury notes of white pepper and black olives with some smoky oak on the palate. VintageThe vintage of 2001 was a warm one, with the Strathbogies experiencing dry conditions up to and through harvest time. The vintage is charcterised by intense black fruits and spice and an elegant, fully ripe tannin structure. FermentationFollowing harvest, the fruit was de-stemmed and crushed to a static fermenter where it received two pump overs for the first nine days to intensify colour and flavour. During fermentation the temperature was maintained at between 23 and 26 degrees to allow for a controlled approach to the extraction of flavour and tannin. The wine was directing into barrel where it spent 12 months maturing in American oak barrels followed by 3 months in French oak barrels. CellaringThe wine is showing the first signs of bottle age with a softening tannin structure and the evolution and integration of oak and fruit. Drinking well now and will continue to build in the bottle over the next 3-5 years. Technical Information
