WINE: 2003 PENNON HILL PINOT NOIROur Pennon Hill Pinot has regularly been rated amongst the best sub-$30 Pinot Noirs produced in Australia, with this current release the third highest rated at the 2004 National Wine Show. As always, it shows us what we love about Pinot Noir, wonderful aromas of cherry fruits, spice and savory notes all of which continue on to a rounded and silky palate. VintageSourced from the cooler Pennon Hill vineyards on our estate, our vines were closely monitored to ensure the drought conditions of 2003 didn’t adversely affect the balance of our vines and compromise the quality of the fruit. The experience of our vineyard management team ensured we capitalized on the warm summer and ideal ripening season through autumn, helping us to produce intensely flavoured berries and ripe tannins. A very low yielding year. FermentationAfter hand harvesting, the fruit was de-stemmed and transferred into open fermenters and then fermented hot at 32 degrees over 6 days. To assist extraction of flavour and colour, the skins were kept moist by hand plunging twice a day. After completing fermentation, the wine was pressed off into tank to settle for 2 days. It was then transferred into approximately equal proportions of new, one, two and three year old French oak barrels, predominantly Taransaud and Seguin Moreau tight grain oak for 10 months of maturation before blending and bottling in March 2004. CellaringThe Pennon Hill release is ready for drinking now, but will benefit from medium-term cellaring. Recommend 3-5 years. Technical Information
