WINE: 2004 PENNON HILL PINOT GRIGIO

Our first vintage of Pinot Grigio sourced from a neighbouring vineyard, managed entirely by Montalto, the ‘Black Rabbit’ property. An immensely popular wine at our Cellar Door and Restaurant, it’s clean and refreshing in style with tropical fruit characters finished off with a mineral edge. A light bodied white very easily matched with food or as an aperitif.

Vintage

This variety prospered in the autumn sunshine of 2004 and enjoyed perfect conditions for the development of fruit character.

Fermentation

We hand-picked the fruit early in the season to capture the delicate character of the variety and to ensure it arrived at the winery in optimum conditions.

At the winery it was de-stemmed, crushed and chilled in tank, before racking off the clear juice and inoculating for fermentation. It was fermented at below 15 degrees to maintain its fresh fruit characters, before being racked off lees, later assembled and bottled.

Cellaring

Our Pinot Grigio is best enjoyed in its youth to capture the vibrancy and freshness of fruit character. Recommend 0-3 years.
