WINE: 2004 PENNON HILL ROSÉA wine in the great tradition of fine European Rosé, we produce ours in a crisp dry style that capitilises on the wonderful berry fruit flavours of Pinot Noir and Pinot Meunier. These luscious flavours are balanced with a fresh acidity which make it a style perfect as a nicely chilled aperitif or matched with Mediterranean and Asian inspired cuisine. VintageSourced from our Pennon Hill vineyards, the two Pinot varieties enjoyed the extended ripening season of 2004, ensuring a bright, vibrant, ripe fruit which is the cornerstone of this wine. FermentationThe Pinot Meunier was crushed and held on skins for 12 hours to gently coax out the most delicate and freshest of flavours, it was then pressed, cold settled and racked off lees. The Pinot Noir was bled off from open fermenters after 36 hours. Both parcels of fruit were fermented cold at 12 – 15 degrees to preserve the freshness and delicacy this wine captures so beautifully.
