WINE: 2004 PENNON HILL SAUVIGNON BLANC / SEMILLONThis classic dry white blend is always one of our best sellers at Montalto restaurant, due largely to its punchy ripe fruit characters and crunchy, crisp acid, perfect foils to our famous Red Hill goats cheese soufflé and the seafood dishes on our menu. This vintage is driven by very ripe and expressive fruit showing passionfruit, fig and melon with a grassy, herbaceous edge in the background. As with previous vintages, this wine blends our Estate grown Semillon with Sauvignon Blanc sourced primarily from selected Margaret River parcels. VintageThe later ripening varieties of Semillon and Sauvignon Blanc fared particularly well in the late season sunshine. Dry conditions ensured that the fruit was picked disease–free and in great condition. FermentationOur Semillon is one of the last of the grapes to be picked on our Pennon Hill vineyard. Once at the winery it was de-stemmed, crushed and chilled before racking off the clear juice and inoculating for fermentation. It was fermented at below 15 degrees to maintain its fresh fruit characters, before being racked off lees. The Sauvignon Blanc was chilled, de-stemmed and crushed and pressed, then cold settled and fermented at 12-15 degrees. Some time was spent on lees before racking off. The wine was bottled in August 2004, under screw cap to retain the fresh and delicate flavours. CellaringDelicious now, why wait! Technical Information
